Bean And Mince Bake
Serves: 4-6
Cooking time: 1 hour

* 3 Tbsp olive oil
* 1 onion, chopped
* 1 tsp crushed garlic
* 400g lean beef mince
* 1 tsp chili powder
* 1/2 tsp ground cumin
* 1 can kidney beans, drained and rinsed
* 250ml sour cream
* 2 Tbsp flour
* 6 Mexican wraps
* 1 can Mexican tomato relish
* 250ml cheddar cheese, grated

1. Preheat the oven to 180 C. In a large pot, heat the oil and fry the onion and garlic till tender. Add the mince, chili powder and cumin and continue to fry till well browned. Stir in the kidney beans and simmer on low heat. 
2. In a bowl, mix the sour cream and flour then set it aside. Place half of the wraps in the bottom of a lightly greased baking dish, so they overlap on the sides. Top with half of the meat mixture, half of the sour cream mixture and half of the tomato relish. Repeat the layers. 
3. Sprinkle with some of the cheese and bake for 35 to 40 minutes or until bubbly and golden. Remove from the oven and sprinkle with the rest of the cheese and bake for 5 minutes so the cheese melts. This is delicious served with a salad.
