Beef and Vegetable
Serves: 4-6
Cooking time: 2 hours

*  500g stewing beef
*  1 Tbsp oil
*  1 litre beef stock
*  1 litre water
*  1 can tomato relish
*  1 onion, chopped
*  1 potato, diced
*  1 cup frozen mixed vegetables
*  1/2cup barley
*  1 celery stalk, sliced
*  1 bay leaf
*  2 tsp crushed garlic
*  1 tsp dried oregano
*  Salt and pepper

1. Trim the fat from the meat and cut into pieces. In a large pan, heat the oil and brown the meat on all sides. Drain off the fat and set aside. 
2. In another pot, heat the water, stock, tomatoes, onion, potatoes, frozen vegetables, barley, celery, bay leaf, garlic and oregano. Cover and cook on medium heat for 1 hour and 30 minutes, adding more water if necessary. 
3. When the barley is fat and the vegetables are cooked through, add the beef and simmer for 15 minutes. Season to taste. 
4. Serve with your favourite bread, dumplings or pap.
