Spicy Bean
Serves: 4-6
Cooking time: 1 hour 30 minutes

Ingredients
*  1 Tbsp vegetable oil
*  1 tsp garlic, crushed
*  1 onion, chopped
*  1 celery stalk, sliced
*  2 medium carrots, sliced
*  2 tsp ground cumin
*  salt to taste
*  1 tsp cayenne pepper
*  1 litre chicken stock
*  2 cups water
*  3 cans butter beans, drained
*  1 tsp ginger, grated
*  1 cup orange juice
*  1 cup basil pesto
*  Fresh coriander to garnish


Preparation 
1. In a pot heat the oil and fry the onion, celery, carrots and garlic until tender. Stir in cumin, salt and cayenne pepper and stir.
2. Add stock and water. Bring to the boil, then reduce the heat and cover. Simmer till the mixture is thicker and the vegetables are tender. Stir in the butter beans and simmer for 20 minutes.
3. Pour the soup into a deep bowl and using a handheld blender, blend mixture slightly. Return to the pot.
4. Add the ginger, juice and pesto and allow to heat. Sprinkle with coriander and cayenne pepper to serve.
